Healthy Recipe: Blueberry Baked Oatmeal

Blueberry Baked Oatmeal is Health Coach Britt's go-to breakfast recipe, not only because it is a warm and cozy start to her day, but also because it is her favorite pre-workout meal. Since it is high in whole grains and fruit, it provides the body with the fiber-fueling energy it needs to perform at its best!

Ingredients

  • 2 ¾ cups old-fashioned rolled oats

  • 1 teaspoon baking powder

  • ¼ teaspoon fine salt

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ⅓ cup honey (or maple syrup!)

  • 1 ripe banana, mashed

  • 2 large eggs

  • 1 ½ cups milk of choice 

  • ¼ cup melted unsalted butter or coconut oil

  • 2 teaspoons pure vanilla extract

  • ¼ cup almonds

  • 1 ½ cups frozen blueberries

  • OPTIONAL: 1 ½ tablespoons chia seeds

Instructions

  1. Preheat oven to 375*F. Spray a 9x9 or 8x8-inch baking dish with cooking spray.

  2. Combine all of the ingredients in a bowl and mix. 

  3. Pour the mixture into the prepped baking dish (if desired, add more frozen blueberries and nut of your choice - I love almonds!)

  4. Bake in preheated oven for 30-35 minutes until center is set.

  5. Once center is set, remove from oven and let it sit for 10 minutes.

  6. Finish with topping of your choice: yogurt, maple syrup, or honey are all delicious, healthy options.
