Miso Salmon

Ingredients:

·        1 lbs center-cut, skin-on salmon (cut into 4)

·        2 tbsp sliced scallion

·        ½ tsp grated ginger

·        1 tbps sesame seeds

·        2 tbsp white miso paste

·        2 tbsp mirin

·        1 tbsp soy sauce

 

Directions

1.      Preheat broiler and make sure rack is in one of the top two positions.

2.      Place tin foil on a baking sheet and spray with cooking spray.

3.      Whisk miso paste, mirin, soy sauce and ginger in a bowl until smooth. Thin with water if needed.

4.      Toast sesame seeds on a dry skillet over low heat. Stir constantly until fragrant and set aside. Usually takes 3-5 minutes.

5.      Place salmon, skin side down, on prepared sheet. Brush with miso/mirin glaze.

6.      Broil salmon for 6-8 minutes.

7.      Plate and serve!
