Chickpea Chocolate Chip Blondie

These blondies are the perfect last-minute, healthy treat! Grab everything from your pantry and you’re on your way to a yummy and guilt-free dessert.

Ingredients

·        1 (14 oz) can chickpeas, drained and rinsed

·        ⅓ cup oat flour

·        ⅓ cup peanut butter or preferred nut butter

·        ½ cup maple syrup

·        ¼ cup vegan mini chocolate chips

·        1 ½ teaspoons vanilla extract

·        ¼ teaspoon baking powder

·        ¼ teaspoon baking soda

·        ½ teaspoon salt

Instructions

1.                Preheat your oven to 350 F and line an 8×8-inch baking pan with parchment paper

2.                Rinse chickpeas and dry with a paper towel.

3.                In a food processor, add the chickpeas, peanut butter, maple syrup, vanilla, baking soda, baking powder, and salt. Pulse until the mixture is completely combined.

4.                Add oat flour and pulse a few more times until evenly distributed.

5.                Stir in half of the chocolate chips.

6.                Spread the batter into the prepared baking pan and top with the remaining chocolate chips.

7.                Bake for 20 minutes or until the top of the blondies feels set.

8.                Let the blondies cool in the pan for 10 minutes. Carefully lift the bars out of the pan and set on a cooling rack. Allow blondies to cool completely for at least 1 hour before serving!
