Healthy Mini Pies!

Ingredients

Crust

  • 2 c almond flour

  • 2 tbsp honey

  • 2 tbsp melted coconut oil

  • 1 egg

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp salt

Filling

  • 2 apples diced very small

  • 2 tbsp brown sugar

  • 1 tbsp butter or coconut oil

  • 1 tsp pumpkin pie spice

Ingredients

  1. Preheat oven to 325 and grease mini muffin tin

  2. In a large bowl, mix flour, baking powder, salt and cinnamon.

  3. In separate bowl, combine egg, honey and oil.

  4. Add wet ingredients to dry and mix until fully combined.

  5. Rest dough for 5 minutes.

  6. Distribute dough into muffin tin. 1-2 tbsp into each tin and create dent in the middle.

  7. Bake for 10-12 minutes.

  8. Cool completely

  9. In saucepan, melt butter, then add apples, sugar and spice.

  10. Cook down until apples are softened.

  11. Add filling to pie crusts

  12. Enjoy!
